While grocery shopping for our Valentines meal I asked my husband if he wanted any strawberries. "Nope," was his reply. So I stuck to the broccoli, radishes, and celery. Instead of chocolate covered strawberries we had chicken salad sandwiches and pasta salad. I love these dishes and they are easy to put together and you can always add or take away ingredients. Here are the basic recipes.
Chicken Salad
Chicken (4-5 chicken breasts diced)
celery
grapes or mix it up with some pomegranates
almonds or cashews or walnuts
avocado (add last to help prevent them from getting too smashed)
green onion or onion (optional)
sprinkle of rosemary
mayo (I like to add a spoonful at a time because I prefer less than too much)
Add as much or as little of each ingredient as you like to the mix and place in a roll or croissant.
Pasta Salad
Box of Rotini pasta
Bottle of Italian dressing (add to preference. I like a little less than half a bottle)
5 radishes
1/8 of a cup green onions (eyeball it)
can of kidney beans
black olives
cup of carrots
cup of broccoli
cup of grape or cherry tomatoes
(Almost any vegetable will work. This recipe can be changed every time you make it and it will always be yummy.
